Rousseau Chocolates

ROUSSEAU Chocolatier is a heartfelt collaboration between Master Chocolatier Julien Rousseau-Dumarcet of France and luxury hospitality professional Nathalie Morin of Ottawa. Based in Halifax, Nova Scotia, they craft their confections by hand, inspired by generations of European chocolate-making tradition and a deep respect for premium, local ingredients.

Using the finest chocolate from Cacao Barry in France, founded in 1842, they create artisanal confections that reflect both technical mastery and regional pride. Many of their creations feature extraordinary ingredients grown and made right here in Nova Scotia, from berries to spirits to sea salt.

Each piece, whether a velvety ganache, a delicately balanced caramel, or a bold seasonal flavour, is a celebration of quality, authenticity, and the love story that brought this unique chocolate experience, to life.
